If you just want to play around with the browser and explore, the Dev build is probably better suited for that purpose. You can install and try out either or both (or neither) on a Mac. The Canary build will receive updates daily, while the Dev build will receive updates weekly. Updates to the Edge builds will arrive through the browser itself, much like they do in Google Chrome (which again, Edge for Mac is based on Chromium). From some brief preliminary testing, despite being a developer beta build it seems to work fine and be stable enough for regular use.
